Roasted vs Raw Makhana: Which One Should You Buy?

by Makhana.com 25 Aug 2026

Makhana comes in two main forms: raw and roasted. Both come from the same popped lotus seed (fox nut), but they suit different needs. Here is how to choose.

What is raw makhana?

Raw makhana is the plain, unseasoned fox nut — exactly as it is after popping and drying. It has a neutral taste and a slightly soft crunch until you roast it. Our premium raw makhana is graded by size (called sutta): bigger pearls like 5+ and 4+ sutta are considered top grade.

What is roasted makhana?

Roasted makhana is fox nuts that have been roasted — ideally in olive oil rather than deep-fried — and lightly seasoned. It is crisp, ready to eat, and comes in flavours such as Peri Peri, Chatpata Pudina, Salt & Pepper and Cream & Onion.

Nutrition: is one healthier?

Both are high in protein and fibre, gluten-free, and free of cholesterol. Raw makhana is the most natural option because it has nothing added. Good-quality roasted makhana stays healthy as long as it is roasted (not fried) and lightly seasoned.

Which should you buy?

  • Choose raw makhana if you like to roast and season it yourself, cook it in kheer or curries, or eat it during fasting.
  • Choose roasted makhana if you want a ready-to-eat, flavourful snack for office, travel or tea-time with zero effort.

Many people keep both at home — raw for cooking, roasted for grab-and-go snacking.
