- 3 cups makhana
- 1 teaspoon ghee or neutral cooking oil
- 1 small onion, finely chopped
- 1 small tomato, deseeded and chopped
- 1 small cucumber, chopped
- 2 tablespoons fresh coriander, chopped
- 1 green chilli, finely chopped, optional
- 1/2 teaspoon roasted cumin powder
- 1/4 teaspoon chaat masala
- A pinch of black salt or regular salt
- Fresh lemon juice to taste
- Pomegranate seeds, optional
How to make makhana chaat
1. Roast the makhana until crisp
Heat ghee or oil in a wide pan over low to medium heat. Add makhana and roast for 6 to 8 minutes, stirring often. Test one piece after it cools for a few seconds: it should be crisp through the centre rather than chewy.
2. Prepare the fresh ingredients
While the makhana cools, chop onion, tomato, cucumber, coriander and chilli. Removing excess tomato juice helps keep the chaat crunchy for longer.
3. Season just before serving
